Split Pea Soup
Split Pea Soup is an moderately easy dinner. Made with 2 c. split peas, soaked overnight in 2 qt. water, 1 meaty ham bone or 2 ham hocks, 1/2 tsp. pepper, 1 c. finely chopped celery and 1 large carrot, scraped and shredded, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Bring soaked peas to a boil, adding water if necessary. Reduce heat, add ham bone and pepper.
Cover and simmer one hour. Add celery, carrot and onion.
Simmer one hour longer.
Remove ham bone.
Pull off meat and shred it finely.
Return meat shreds to soup and add remaining ingredients.
Simmer 20 minutes.
