Spinach Squares
Spinach Squares is an moderately easy dinner. Made with 2 (10 oz. each) pkg. frozen chopped spinach, thawed, 3 tbsp. butter or margarine, 1 small onion, chopped, 1/4 lb. mushrooms, sliced and 4 eggs, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Squeeze out as much moisture from spinach as possible.
Set aside.
Melt butter in skillet.
Add onion and mushrooms; cook, stirring, until soft.
In bowl, beat eggs lightly; stir in onion mixture, bread crumbs, soup, 2 tablespoons cheese, pepper, basil, oregano and spinach.
Pour into well greased 9-inch square baking pan; sprinkle with remaining cheese.
Bake in a 325Β° oven for 35 minutes or until edges begin to brown.
Serve warm; or let cool, cover, refrigerate and serve cold.
