Spinach Soufflé
Spinach Soufflé is an moderately easy dinner. Made with 2 boxes frozen chopped spinach, 5 large eggs, well beaten, 2 c. mozzarella cheese, sprinkling of parmesan cheese and 1/2 c. milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cook spinach according to directions; drain most of the juice (but don't press out excess juice).
Add all the ingredients, putting eggs in last.
Pour into a well buttered casserole or soufflé dish.
Spread the surface with buttered bread cubes (white or French bread).
Sprinkle top with grated Parmesan cheese.
Bake at 350° for 30 to 35 minutes in the middle of oven.
Serves 6 to 8.
