Spinach Soufflé
Spinach Soufflé is an moderately easy dinner. Made with 1 pkg. frozen chopped spinach, thawed, 3 tbsp. diet margarine, 3 tbsp. all-purpose flour, 1 c. skim milk and 1/2 c. egg substitute or egg white, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Place thawed spinach in a strainer to drain.
A saucepan, melt margarine, stir in flour, add milk and cook, stirring constantly until thickened.

Beat egg substitute, add drained spinach, green onions, nutmeg and salt and pepper to taste.
Add to flour mixture.
In a large mixing bowl, beat egg whites until stiff.
Carefully fold spinach mixture into the egg whites.
