Spinach Soufflé
Spinach Soufflé is an moderately easy dinner. Made with 3 pkg. leaf spinach, 1 large minced onion, 4 tbsp. margarine, 1 tsp. salt and 1 1/2 c. milk, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Thaw and drain spinach; squeeze dry.
Cook onion and margarine.
Stir in spinach; cover and cook 5 minutes.
Add salt, milk and margarine.
Slowly add eggs while stirring.
Blend in bread crumbs and cheese.
Place spinach mixture in mold which has been lined with waxed paper.
Top with a few crumbs.
Bake about 60 minutes at 325°.
If desired, serve topped with tiny cocktail tomatoes.
