Spinach Soufflé
Spinach Soufflé is an moderately easy dinner. Made with 2 tbsp. margarine, 2 tbsp. flour, 1/2 tsp. salt, 1/2 c. skim milk and 1/2 pkg. frozen chopped spinach, cooked and drained, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Melt margarine.
Blend in flour and salt.
Cook over low heat; stir until smooth and bubbly.
Remove from heat and gradually stir in milk.
Return to heat and bring to boil, stirring constantly. Cook 1 minute.
Remove from heat.
Stir in spinach and onion. Beat Egg Beaters; fold in spinach mixture.
Put in greased casserole.
Bake at 325° for 50 minutes.
