Spinach Roll-Ups
Spinach Roll-Ups is an easy dinner. Made with 1 pkg. frozen, chopped spinach, 2 boneless, skinless chicken breast halves, 1 can tomato sauce, shredded mozzarella cheese and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Defrost spinach; set aside.
Take chicken breasts and flatten until thin. Season both sides to taste.
Place 1 or 2 tablespoons chopped spinach on each breast half.
Roll up and secure with toothpick.
Place chicken rolls in nonstick skillet and cook, turning until cooked.
Place the rest of the spinach in skillet and pour tomato sauce over all.
Cook 5 or 10 minutes longer. Sprinkle with Mozzarella cheese. Cover until cheese melts.
Serve over rice.
Serves 2 people.
