Spinach Ricotta Dip
Spinach Ricotta Dip is an moderately easy dinner. Made with 1 qt. fresh spinach, chopped, 1/2 c. onion, chopped, 1 (8 oz.) pkg. cream cheese, 3/4 c. low-fat ricotta cheese and 1/2 tsp. basil leaves, crushed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350Β°.
Place spinach and onion in small saucepan with small amount of water.
Cover and cook 5 minutes or until tender; drain well.
Beat cheeses and seasonings in small mixing bowl at medium speed until well blended.
Stir in spinach mixture and spread into 9-inch pie plate.
Bake 15 to 20 minutes or until thoroughly heated.
Top with tomato and Parmesan cheese. Serve with crisp rye crackers or bagel chips.
Makes 12 servings.
