Spinach Quiche
Spinach Quiche is an moderately easy dinner. Made with 16 slices bacon, fried and crumbled, 1 unbaked 10-inch pastry shell, 2 large onions, thinly sliced, 12 oz. swiss cheese, grated and 1 1/4 c. cooked, chopped spinach, well drained, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Sprinkle bacon on bottom of pie crust.
Saute onions in bacon drippings; place onions over bacon.
Sprinkle cheese over onion layer; add layer of spinach.
Beat together eggs and half and half.
Season with salt and pepper; pour over pie.
Sprinkle with Parmesan cheese.
Bake 10 minutes at 450°, then reduce heat to 300° and bake an additional 45 to 50 minutes or until custard is set.
Let set for a few minutes before serving.
