Spinach Quiche
Spinach Quiche is an moderately easy dinner. Made with 1/2 c. crushed bran or whole wheat crackers (about 17-1 1/2), 2 whole eggs and 4 egg whites, beaten, 1/2 c. skim milk, 1/2 c. low-fat yogurt and 1/2 c. dry curd cottage cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350°.
Spray 9-inch pie pan with nonstick spray.
Mix crumbs with small amount of egg mixture, just to moisten and spread in bottom of pan.
Beat together eggs, milk, yogurt, cottage cheese, Mozzarella cheese and spinach.
Pour into pie pan with prepared crust.
Bake at 350° for 35 to 40 minutes or until knife inserted comes out clean.
