Melt butter in a large skillet.

Saute onions over medium heat until soft, about 5 minutes.

Add spinach and continue to cook, stirring often, until no liquid is left.

Add salt, pepper and nutmeg.

Stir well and allow to cool.

Preheat oven to 375Β°.

Beat eggs and cream together; gradually add to spinach mixture.

Stir until smooth.

Add cheese and combine.

Pour mixture into pie shells.

Place shells on cookie sheet and bake 30 to 35 minutes or until a knife inserted into pie comes out clean.

Serve hot or room temperature.
