Spinach Pinwheels
Spinach Pinwheels is an moderately easy dinner. Made with 1 1/2 c. light sour cream, 4 oz. shredded cheddar cheese (1 c.), 1/2 c. chopped ripe olives, 1 tbsp. finely chopped onion and 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Mix all ingredients except tortillas.
On each tortilla spread about 1/2 cup of the spinach mixture.
Roll up tightly; wrap in plastic wrap.
Refrigerate at least 2 hours or until firm.
To serve, remove plastic wrap, cut each rolled tortilla into about 10 slices.
