Spinach Madeline
Spinach Madeline is an impressive dinner you can prepare in about 1 hour 54 minutes. Made with . frozen chopped spinach, . butter, . flour, to 3 tbsp. chopped onion and c. evaporated milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook spinach as directed on package.
Drain and reserve liquor.
Melt butter in saucepan over low heat.
Add flour, stirring until blended and smooth, but not brown.
Add onion and cook until soft.
Add vegetable liquor and milk slowly, stirring to avoid lumps.
Add seasonings and cheese, cut in small pieces. Stir until melted.
Combine with cooked spinach.
Put in casserole dish (flavor is improved if refrigerated overnight).
Heat in a 350° oven until bubbly.
Sprinkle fried onions over casserole and bake for 5 more minutes.
