Spinach Madeleine
Spinach Madeleine is an moderately easy dinner. Made with 2 pkg. frozen chopped spinach, 4 tbsp. butter or margarine, 2 tbsp. flour, 2 tbsp. chopped onion and 5 oz. evaporated milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cook spinach according to directions on package.
Drain and reserve liquid.
Melt butter in sauce pan over low heat.
Add flour, stirring until blended and smooth, but not brown.
Add onion and cook until soft, but not brown.
Add liquid slowly, stirring constantly to avoid lumps.
Cook until smooth and thick.
Continue stirring.
Add seasoning and cheese which has been cut into small pieces.
Stir until cheese is melted.
Combine with cooked spinach. Put into a casserole and top with bread crumbs and butter.
Bake at 350 degrees until bread crumbs are light golden brown.
