Spinach Madeleine
Spinach Madeleine is an impressive dinner. Made with 2 pkg. frozen chopped spinach, 4 tbsp. butter, 2 tbsp. flour, 2 tbsp. chopped onion and 1/2 cup evaporated milk, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook spinach according to package directions; drain and reserve liquid.
Melt butter and add flour, stirring until smooth. Add onion and cook until soft.
Add liquid and stir to avoid lumps.
Cook until smooth and until melted.
Combine with spinach. Place in casserole and top with buttered crumbs.
This freezes well.
Serves 6.
