Spinach Frittata *
Spinach Frittata * is an moderately easy dinner. Made with 1 lb. spinach, washed and trimmed, 1/4 c. oil, 6 eggs, 1/4 c. matzo meal and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Wilt spinach with 2 tablespoons oil.
Drain.
In large bowl, beat eggs lightly.
Add remaining ingredients, except oil.
Heat oil in heat bottomed and broiler proof skillet.
Pour in mixture; cook over gentle heat until bottom sets.
Place in broiler until lightly browned and set.
Turn out onto platter.
Cut like a cake. Eat hot or cold.
Yields 4 to 6 good slices.
