Spinach Dip
Spinach Dip is an easy dinner. Made with 1 c. fat-free cottage cheese, 2 pkg. dry vegetable soup mix, 1 (8 oz.) can sliced water chestnuts, 1 (10 oz.) box chopped spinach and 1 c. fat-free mayonnaise, this recipe delivers authentic, satisfying flavors. Thaw spinach, if frozen.
Drain and chop water chestnuts. PurΓ©e cottage cheese in food processor or beat very well.
Squeeze all the moisture from thawed spinach.
Mix all ingredients in large bowl.
Chill minutes up to overnight.
Serve with fat free crackers or in a bread bowl.
Yields 8 servings (1/4 cup each). Has 80 calories, less than 1 gram of fat per serving.
