Spinach Casserole is an moderately easy dinner. Made with 2 pkg. frozen chopped spinach, 4 tbsp. butter, 2 tbsp. chopped onion, 2 tbsp. flour and 1/2 c. evaporated milk, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook spinach; drain and keep liquid.
Melt butter over low heat.
Add flour, stirring until blended and smooth.
Add onion until cooked, but not brown.
Add liquid slowly.
Stir to avoid lumps.
Cook until smooth and thick.
Add seasonings, cheese and milk.
Stir until melted.
Combine with spinach in casserole dish.
