Spinach Casserole
Spinach Casserole is an moderately easy dinner. Made with 2 9-oz pkg frozen chopped spinach, thawed and drained, 2-1/2 c shredded cheese (any kind), 1/4 c butter, melted or flaked, 2 c cottage cheese, drained and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Thaw and thoroughly drain spinach in colander, mashing down with spoon to extract liquid.
Mix together flour, butter, salt, and eggs until a paste-like mixture forms.
Add all ingredients to a 5 qt. crockpot and cook on low for 5 hours.
Stir occasionally. Salt a pinch if desired.
