Cook spinach as directed; drain.
Add remaining ingredients and mix thoroughly.
Refrigerate for an hour.
Using an ice cream scoop, form balls and place on a flat pan.
Freeze; store in a plastic bag until ready to bake and serve.
Place frozen balls on thick tomato slices and bake, uncovered, for 25 minutes at 350Β°. Makes 24 balls.
