Spicy Apple Compote
Spicy Apple Compote is an moderately easy dinner. Made with 1 (6 oz.) can frozen cranberry juice cocktail concentrate, 3 juice cans cold water, 1 c. sugar, 1/2 lemon, sliced thin and 1 cinnamon stick (about 4 inches long), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In large saucepan, dissolve concentrate in water.
Add sugar, lemon, cinnamon stick and cloves.
Bring to boil, stirring to dissolve sugar, adding 5 or 6 apple halves once, 6 to 8 minutes, or until almost tender.
Discard lemon, cinnamon and cloves. Chill and serve or store, covered, in refrigerator up to 3 weeks.
