Spiced Red Cabbage is an moderately easy dinner. Made with 1/2 medium red cabbage, diced, 1 tbsp. vegetable oil, 1/2 c. chopped onion, 1 medium tart apple, quartered and 3 tbsp. tarragon or red wine vinegar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Place cabbage in a large kettle of boiling saltwater.
Boil for 1 minute.
Return to kettle; stir in remaining ingredients.
Cover and simmer for 1 hour or until cabbage is tender.
Remove bay leaf.
