Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1 chopped big (whole) onion, 2 to 3 chopped green bell peppers, 2/3 c. rice, 1 c. water and 1 lb. (12 oz.) can crushed tomatoes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Fry onion and bell peppers in oil until tender.
Cook over low to medium heat.
Add tomatoes, water, onions, peppers, rice, salt and black pepper.
Stir constantly until done.
Serve with crumbled cornbread or cooked cabbage, if desired.
