Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1/2 c. diced onions, 2 tbsp. shortening, 1 1/2 to 2 c. tomato juice, 1/2 c. water and 2 medium diced green peppers, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown onions lightly in shortening.
Add meat.
Break up particles so meat mixture is very fine.
When brown, drain and add peppers, tomato juice and water.
Add rice. Season to taste, stirring well.
Bring to a boil.
Reduce heat.
Let simmer about 30 minutes or until peppers are tender.
