Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1/2 c. raw white rice, washed, 1 c. sliced, peeled onions, 2 tbsp. butter, margarine or oil, 2 1/3 c. canned tomatoes and 1 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook the rice until tender (about 45 minutes).
Meanwhile, cook the sliced onions in the butter until tender.
Add the remaining ingredients and simmer, uncovered, for 15 minutes. Remove bay leaf and cloves and add the rice.
Turn into a greased 1-quart casserole.
Bake in a moderately hot oven at 375Β° for 30 minutes.
