Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 6 slices bacon, 1 small green pepper, chopped, 1 onion, finely chopped, 1 (28 oz.) can tomatoes, cut and 1 c. water, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook bacon until crisp.
Drain on paper towel; crumble and set aside.
Drain fat from pan, reserving 2 tablespoons of drippings in skillet.
In drippings, cook onion and green pepper until tender.
Stir in undrained tomatoes, water, rice, brown sugar, Worcestershire sauce, salt, chili powder, black pepper and hot sauce.
Cover.
Simmer about 30 minutes or until rice is done. Top with bacon. Sprinkle with shredded cheese, if desired.
