Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 6 slices diced bacon, 1 c. instant white rice, 1/2 c. thinly sliced onion, 1 (14 1/2 oz.) can stewed tomatoes, cut up and 1/2 tsp. salt (optional), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute bacon until crisp.
Remove bacon from the pan and drain on paper towel.
Discard half of the drippings.
Stir rice in the remaining drippings and brown.
Add bacon, tomatoes with juice, green pepper and paprika.
Cover and cook about 30 minutes.
Add water or stock, if necessary.
Makes 3 to 4 servings.
