Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1 1/2 c. long cooking rice, 2 tbsp. cooking oil, 1 small onion, finely chopped, 1/2 medium bell pepper, finely chopped and 1 medium tomato, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat oil over medium heat.
Add rice and lightly brown.
Add spices and vegetables.
Cook over medium heat, stirring frequently until onion is translucent.
Add water and salsa (if desired). Bring to a boil.
Lower heat to low.
Cover and simmer until all moisture is absorbed and rice is tender.
Serves 4 to 6.
