Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1/2 lb. bacon, 1/4 c. green pepper, chopped, 1/2 c. onion, chopped, 1 large can whole, peeled tomatoes and 1 tsp. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Chop and fry bacon.
Drain and keep half of grease.
Remove bacon from pan.
Saute green pepper and onion in grease.
Purée tomatoes (with liquid) in blender.
Add to green pepper, onion and sugar.
Simmer for 15 minutes.
Add cooked rice and bacon.
Pour into buttered casserole dish or 9 x 13 x 2-inch baking dish.
Top with grated cheese.
Bake (uncovered) at 350° for 1/2 hour.
