Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 6 slices bacon, 1/4 c. chopped onion, 3 c. cooked rice, 1 (16 oz.) can tomatoes and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Fry bacon in a large skillet until crisp.
Drain off all but 2 tablespoons fat.
Stir in onion and green pepper.
Cook and stir until onion is tender.
Crumble bacon; stir in remaining ingredients.
Cook, uncovered, over low heat for about 15 minutes. Preheat oven to 400Β°.
Pour mixture into greased 1 1/2-quart casserole and bake 25 to 30 minutes.
