Spanish Rice
Spanish Rice is an moderately easy dinner. Made with dash of lemon pepper, 2/3 c. raw rice (not instant), 2 to 3 tbsp. chopped onion, 1/2 grated bell pepper and 2 small cloves thinly sliced garlic, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In small iron skillet, slowly brown rice, onion and pepper in 2 tablespoons olive oil.
Add spices, then add hot water with chicken bouillon dissolved in it.
Cover.
Cook on lowest heat for 15 minutes.
This is very good with enchiladas and refried beans.
