Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1 c. uncooked rice, 1/4 c. margarine, 1 medium onion, thinly sliced, 2 c. stewed tomatoes with juice and 1/2 medium green pepper, diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat margarine in saucepan; add onion and green pepper.
Cook and stir over high heat until light brown.
Add tomatoes, water, salt and pepper.
Bring to boil gently.
Cover tightly; lower heat and simmer gently 30 minutes.
