Spanish Rice is an moderately easy dinner. Made with 4 tbsp. butter or bacon fat, 1 c. rice, uncooked, 2 tsp. salt, 1/4 tsp. paprika and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat the frying pan.

Add butter and brown the onion and celery.

Remove and add the rice.

Cook until brown, stirring constantly.

In a separate kettle, heat the tomatoes with the seasoning and the stock, then add the rice, onion and celery. Simmer slowly over a low fire until rice is tender, about 1/2 hour, stirring occasionally with a fork to prevent sticking.

Fifteen minutes before serving, fry the hamburg which has been shaped into small balls and add to rice.
