Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 1 to 1 1/2 lb. ground beef, 1 medium onion, chopped, 1 bell pepper, chopped, 2 c. tomato juice and 2 c. minute rice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Brown ground meat in large frying pan, breaking it up as it cooks.
Drain fat.
Add onion and bell pepper.
Saute with meat until tender.
Add tomato juice, salt, pepper and garlic powder. Add salsa in amount necessary to make spicy for your taste.
Bring mixture to a boil.
Add rice and olives.
Stir, cover and remove from heat.
Let stand, covered, at least five minutes before serving.
