Spanish Rice
Spanish Rice is an moderately easy dinner. Made with 3 slices bacon, 1/2 c white rice, 1/2 c onions, diced, 1 1/4 c canned tomatoes and 1/2 t salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Saute bacon in skillet until crisp.
Remove bacon and drain on paper towels.
Add rice to bacon dripping remaining in pan and cook until browned.
Add onions and cook until golden.
Add bacon and remaining ingredients.
Cover and cook until rice is tender.
More liquid may be added in the form of tomato juice or beef or chicken stock.
Serves 4.
