Spanish Rice is an moderately easy dinner. Made with 6 slices bacon, diced, 1/4 c. chopped onion, 1/4 c. chopped green pepper, 3 c. cooked rice and 1 (1 lb.) can tomatoes, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Fry bacon in skillet until crisp; remove bacon and drain. Pour off all but 2 tablespoons of drippings.

Add onion and green pepper to drippings in skillet; cook and stir until onions are tender.

Stir in bacon and remaining ingredients.

Bake in 350Β° oven for 30 to 35 minutes; do not cover.

You can also use sausage or frankfurters in place of bacon.
