Spanakopeta
Spanakopeta is an moderately easy dinner. Made with 1 1/2 lb. spinach, cut in pieces, 1/2 c. finely chopped dill, 1/2 c. finely chopped parsley, 1/2 c. finely chopped green onions and 5 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Rinse spinach well in cold water.
Drain thoroughly and cut into small pieces. Salt spinach, then squeeze out the water as well as possible and set aside.
Saute the white and green onions until limp, using 1/2 cup of the butter.
Add the spinach and continue to together.
The dill, parsley, salt and pepper; continue to simmer lightly until the moisture of the spinach evaporated.
The fire.
Add the milk to cool the spinach a little.
