Southwestern Eggs
Southwestern Eggs is an moderately easy dinner. Made with 1 lb. bulk chorizo sausage *, 1/2 c. chopped onion, 1 large green bell pepper, cut into 1-inch pieces, 1 1/4 c. prepared salsa and 4 eggs, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cook sausage, onion and bell pepper in 10-inch skillet over medium stirring occasionally, sausage is brown. Drain.
Stir in salsa; heat until hot.
Spread mixture evenly in skillet.
Indentations in mixture with back of spoon. Break 1 egg into each indentation.
Cover and cook over low heat about minutes until whites are set and yolks are thickened.
Sprinkle cheese.
Serve with sour cream, if desired.
