Southwest Salad
Southwest Salad is an moderately easy dinner. Made with 1 (15 oz.) can black beans, rinsed and drained, 1 1/2 c. frozen corn, thawed, 1 1/2 c. chopped plum tomatoes, 3/4 c. thinly sliced green onions and 1/3 c. minced fresh cilantro, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Toss together first 5 ingredients in a bowl.
Whisk together oil, lemon juice and salt; pour over black bean mixture, stirring gently to coat.
Cover and chill at least 8 hours.
