Southwest Cheesecake
Southwest Cheesecake is an moderately easy dinner. Made with 16 oz. cream cheese, 2 c. shredded sharp cheddar cheese, 2 c. sour cream, 3 eggs and 1 1/2 pkg. taco seasoning, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In a mixer, beat together cream cheese and Cheddar cheese until fluffy.
Add 1 cup sour cream.
Add the taco seasoning; beat until mixed.
Beat in eggs, one at a time.
Fold in green chiles. Spoon into a well-greased 9-inch spring-form pan.
Bake at 350Β° for 34 to 40 minutes.
Cool 10 minutes.
Add remaining cup of sour cream to top of cheesecake.
Bake 5 minutes.
Cool and refrigerate overnight.
Remove sides from the pan and place on a serving platter.
Top with salsa, olives and green onions.
Serve with chips.
