Southern Gizzards is an easy dinner. Made with fresh red gizzards (can be frozen), 2 eggs, 2 c. flour, 2 c. pancake mix and 2 c. good oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Heat oil in iron skillet on medium-high heat.
Dip gizzards in whipped eggs and roll in flour or pancake mix.
Put as many as you can get in the skillet.
Turn every 5 minutes for about 20 minutes or dark brown.
