Snowy Potatoes
Snowy Potatoes is an impressive dinner. Made with 8 to 10 potatoes, peeled and quartered, 1 (8 oz.) pkg. cream cheese, softened, 1 c. dairy sour cream, 1/2 c. minced scallions (including some greens) and 1/2 c. minced celery, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook potatoes until tender.
Drain and return pan to low heat, shaking to dry potatoes in large bowl.
Cream together the cheese and sour cream.
Add hot potatoes, one at a time.
Cream mixture and continue beating on high.
On low speed, add scallions, celery, green pepper, parsley, 1/4 cup butter, garlic powder, salt and pepper.
Spoon into a 3-quart baking dish.
Sprinkle with paprika and dot with 2 tablespoons butter.
Bake in a preheated 375Β° oven for 25 minutes or until top is golden.
Serves 8 to 10.
