Snowball Cake
Snowball Cake is an moderately easy dinner. Made with 2 envelopes knox gelatin, 1 c. boiling water, 1 c. sugar, 1 (12 oz.) cool whip and 1 angel food cake, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine gelatin and 1/2 cup water.
Stir and add the boiling water.
Add lemon juice, sugar and pineapple; stir.
Set in refrigerator until partially congealed.
Add 2/3 of the Cool Whip to pineapple mixture.
Break 1/2 the angel food cake into pieces and layer in a 9 x 13-inch pan.
Cover cake with 1/2 of the gelatin, pineapple mixture.
Repeat the above with another layer of cake and pineapple.
Ice over the top with the remaining 1/3 of Cool
Sprinkle with coconut.
Let set overnight. Cut in small cubes.
