Snowball Cake
Snowball Cake is an impressive dinner. Made with 1 large box dream whip or 2 small boxes, 1 large can crushed pineapple, drained, 1 c. pineapple juice, juice of 1 lemon or 3 tbsp. and 2 pkg. unflavored knox gelatin, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dissolve gelatin in 1/2 cup cold water.
Add 1 cup boiling water, sugar, salt, pineapple juice, lemon juice and pineapple. Let mixture almost congeal.
Prepare 1 package Dream Whip according to directions on box.
Add to mixture.
Break cake into small pieces.
Line pan with cake and alternate cake pieces with mixture.
End with layer of cake on top.
Let stand for a few minutes.
Prepare other package of Dream Whip.
Add 1/2 cup powdered sugar and 1/2 teaspoon vanilla.
Spread over top of cake and sprinkle with coconut.
Keep refrigerated.
