Smothered Quail
Smothered Quail is an moderately easy dinner. Made with 2 (4 to 6 oz.) ready to cook quail, salt and pepper (if desired), 1/4 c. butter, 1/2 c. chopped onions and 1/2 c. light cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Split quail in halves lengthwise and brown in skillet in 1/4 cup butter.
Season with salt and pepper. Top with onions and add light cream. Cover and simmer about 30 minutes. Remove quail to a warm platter. Blend 2 tablespoons cold water into cornstarch. Add to pan drippings. Simmer and stir until thick and bubbly.
Pour gravy over quail.
Makes 4 servings.
