Place meat in smoker at low temperature for 2 hours.

Lay a large oven roasting bag in a large pan, allowing room for expansion.

Place meat in bag, liberally sprinkle with garlic. Slice pepper and onion into strips; lay equal portions on meat and in bottom of bag.

Pour soy sauce on meat.

Pour water in bottom of bag and seal according to bag directions.

Preheat oven to 350Β° and cook for one hour.

By using the roasting bag the steam will put moisture back in the meat.
