Smoked Chicken
Smoked Chicken is an easy dinner. Made with 1 large roasting chicken, 1 gal. water, 1/2 c. canning salt, 1 c. tender quick and 5 tbsp. liquid smoke, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Put chicken in larger container (like a 5 gallon plastic pail).
Pour brine (water, canning salt, tender quick and liquid smoke) over it and leave in brine for 24 hours.
Turn chicken end for end a few times during brining time.
Rinse off.
Dry off. Put breast side down on rack.
Roast for 1 hour at 350°, then turn oven down to 250° until done.
