Smitty Cookies
Smitty Cookies is an moderately easy dinner. Made with 1 2/3 c. flour, 1/2 tsp. salt, 1/2 c. brown or white sugar, 3/4 c. shortening and 2 eggs, separated, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine flour, salt and sugar in bowl.
Cut in shortening like for pie crust.
Beat egg yolks with vanilla; add to mixture and blend well.
Press into two ungreased 8-inch square pans, about 1/4-inch thick.
Bake at 375° for 15 minutes.
Cool slightly; spread with jam.
Beat egg whites until they stand in peaks; gradually add 1/2 cup sugar and cinnamon.
Cover jam and sprinkle with chopped nuts.
Reduce heat to 325° and bake 20 to 25 minutes. Cool and cut into bars.
Makes about 36.
