Skinny Cheese Pie
Skinny Cheese Pie is an moderately easy dinner. Made with 1 pkg. unflavored gelatin, 1/8 c. water, 1/2 c. boiling water, 1/3 c. alba (dry milk powder) and 2/3 c. ricotta or cottage cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Soften gelatin in cold water; add boiling water.
Stir in blender a few seconds; add Alba and cheese; stir.
Add sweetener and extract; blend together.
Add 5 to 6 ice cubes one at a time at high speed.
Pour into pie pan and freeze 5 minutes.
Spread with chilled, crushed, sugarless pineapple.
