Made with 2 tbsp. corn oil, 2 medium zucchini (about 3/4 lb.), cut in 1/4-inch slices, 1 tsp. salt, 1/2 tsp. crushed dried basil leaves and 1 small onion, sliced, this recipe delivers authentic, satisfying flavors. Heat corn oil in skillet over medium heat.
Add onion; saute, stirring frequently until tender.
Stir in zucchini, squash, salt, basil leaves, pepper and bay leaf.
Cover and simmer about 20 minutes or until tender.
